Chicken salad is one of those meals you can have any time of the year and any time of the day. Breakfast chicken salad? You bet! Just add scrambled eggs. Midnight snack chicken salad? My favorite kind! All you need is a fork.

You can cook your own chicken, of course, but my favorite way to make chicken salad is using a rotisserie chicken. It’s easy and cheap, and hands down the fastest way to get delicious chunks of chicken on a busy weeknight.
I usually build my sandwich on a croissant, but if that’s not your thing then get creative! Roll it in a tortilla or butter lettuce, or dunk tortilla chips in it. You could go the classic route and use white bread, or mix things up and put it on a salad. Just do your thing. No matter how you eat it, I promise you’re gonna love it.


Bacon Chicken Salad
Ingredients
- 2 cups cooked chicken chopped
- 1/4 cup mayonnaise
- 1 tablespoon greek yogurt
- 1/4 cup bacon* chopped
- 2 teaspoons dill
- 1/3 cup celery chopped
- 3 tablespoons shallot finely chopped
- 1 1/2 teaspoons lemon juice
- 1/2 teaspoon paprika
- 4 teaspoons dijon
- 2 tablespoons parsley chopped
- salt
- pepper
Instructions
- Combine ingredients in a large bowl and mix well.
- Season to taste with salt and pepper.
